Last week we tried a version of a recipe from A Southern Fairy Tale’s, Pasta with Chicken, Basil and White Wine Sauce. It was so yummy. This is definitely going to be a regular around here. I couldn’t believe how much flavor it had, from just a few ingredients. I think that the bacon is key to all of that fantastic flavor.
This week we’re eating out of our freezer, to help stretch our grocery budget a little.
Monday: Bruschetta Chicken
Tuesday: Pretzel Crusted Chicken Fingers
Wednesday: Slow Cooker Mexican Lasagna from 5-Ingredient Slow Cooker Recipes with Homemade Enchilada Sauce
Thursday: Baked Tofu Bites
Friday: Homemade Pizza using my Wheat Germ Pizza Dough and Homemade Sauce
Saturday: Leftover Pizza
Sunday: Grilled Cheese with Tomato and Garlic Soup
I’ll also be whipping up a version of these crackers from Kitchen Stewardship. I made 2 batches these last week, and they were all gone within days! So much better than store bough crackers. And, as usual, my Super Energy Granola Bars a weekly menu staple.

Good idea – sometimes I do that. Just feel like we need to eat up what we have around here instead splurging at the grocery store. Looks like you will be eating good!
