Are you ready for this? This is my all-time favorite pizza. We make this just about ever week. It’s sweet, tangy, salty and cheesy. Everything that a pizza should be. And it of course uses two of my other favorite recipes, POM Wonderful Pomegranate BBQ Sauce and my Whole Wheat and Wheat Germ Pizza Dough. Once you have these two parts of the recipe down, the rest is pretty simple. Of course, you can always use store bough BBQ sauce and pizza crust. But there’s just something special about making everything from scratch. Don’t you think? Or am I the only one?
Chicken BBQ Pizza
Whole Wheat and Wheat Germ Pizza Dough
1/2 to 1 cup POM Wonderful Pomegranate BBQ Sauce
2 cups mozzarella cheese
1/2 cup cooked, shredded chicken
1/4 cup canned or fresh pineapple (drained if canned)
2 pieces of crumbled bacon (turkey bacon works well)
~ Optional ~ 1/4 cup shredded cheddar cheese
Pre-bake the pizza crust according to directions (if using store bought, you may be able to skip this part). Then layer the ingredients in the order listed above, BBQ sauce, cheese, chicken, pineapple and bacon. If you love BBQ sauce, go ahead and drizzle a little more BBQ sauce over the top of everything, then pop the whole thing back in the oven and bake until the cheese is melted and bubbling.
