Ahhh, the holidays. You know what that means? Cookies, that’s right. And lots of them. Today I’m sharing a classic recipe, one that I made with my mom and sister last week during our cookie mania baking day.
There are few things better in this life than chocolate and peanut butter. Take Reese’s Peanut Butter cups. Show me one person who doesn’t like them, and I’ll show you someone who is dead inside. You just can’t not like them! This recipe is cookies answer to peanut butter cups. True, they are not peanut butter cups, but I do have a fantastic recipe for those too. One of these days I’ll get around to sharing that too. Probably after the holidays and after and appropriate detox time. Like, say 2 or 3 days.
Be warned, this is a HUGE batch of cookies. You will need at least 2 bags of Hersey kisses. Maybe even 3 or 4, it really depends on how many you sample while you are unwrapping them.
Peanut Butter Kiss Cookies
1 cup sugar
1 cup packed brown sugar
1 cup creamy peanut butter
1 cup butter
1/4 cup milk (skim is fine)
2 teaspoons vanilla
2 eggs
3-1/2 cups flour
2 teaspoons baking soda
Preheat oven to 375º.
In a large mixing bowl, combine sugar, butter and peanut butter until light and fluffy. Add in milk, vanilla and eggs until well combined. Slowly add in flour and baking soda. Roll into walnut-size balls. Bake for 12-15 minutes, until lightly browned. Let cool on pan for a minute, then press a chocolate kiss into each cookie. Let cool completely before storing.
Simple, traditional and oh so good. Enjoy!
