Yes I know, this doesn’t really fall under The Veggie Challenge, in fact it probably undoes everything that I’ve accomplished so far with getting Eli to eat his veggies. But what is life without a little sweetness, and a lot of chocolate? Plus I LOVE baking, especially cookies. It’s therapeutic and the end result is always something delicious.
I had a huge chocolate attack at work today, and mush to my disappointment, I didn’t have ANY chocolate with me. Not even a forgotten piece buried at the bottom of my purse with all of the old receipts, change and fruit snacks. Believe me, I checked. So when I got home, I HAD to make cookies. By this time it was a matter of life or death.
While I would never turn down a chocolate chip cookie, I like to mix it up a little. So today I’m sharing my Double Chocolate Chip Cookie recipe. And, as a side note, my Kitchen Aid Stand Mixer is perfect for this type of thing. It was one of the most used wedding gifts that we received.
Double Chocolate Chip Cookies
Baked Cookies
2 cups flour
1/3 cup cocoa powder
3/4 teaspoon baking soda
3/4 teaspoon salt (I don’t normally include this)
1 cup butter, softened
2/3 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon almond extract
12 oz chocolate chips – dark chocolate are best!
Cookie Dough
Preheat oven to 375º. In a small bowl combine flour, cocoa powder,baking soda and salt (if using). In a large bowl cream butter and sugars until light and fluffy. Beat in egg and almond extract Gradually blend in the flour mixture. Go slow or you will have a flour explosion! Stir in the chocolate chips.
Drop by heaping teaspoonful onto cookie sheet.
Ready to Bake!
Bake for 8-11 minutes. I like my cookies chewy, so I bake them for 9 minutes. If you prefer crispy cookies, back them for 10-11 minutes.

YUM-O! Sounds delicious. Do you really not use salt? I thought you had to have salt to make the rising agents (baking powder, baking soda, yeast) work.
I love anything with almond extract. Really. It’s a sickness!
Oh, I’m definitely going to have to find a reason to make those soon!
